Brine Volume275 mL
Fermentation Time7 days
Garlic20 g
Estimated Yield676 mL
Estimated Yield22.9 oz
How to Use This Calculator
  1. Enter the total pepper weight in grams.
  2. Set brine salt percentage (2–3% is typical for pepper mash fermentation).
  3. Enter the number of garlic cloves and select your target heat/fermentation time.
  4. The calculator shows brine volume, salt in grams, fermentation days, garlic weight, estimated yield in mL and oz.
  5. Pack peppers and garlic into a jar, pour over brine, weigh down to keep submerged, and ferment for the displayed days before blending.

How the result changes with Pepper Weight (g)

Pepper Weight (g)Salt for Brine
1,04520 g
3,53368 g
6,518125 g
9,005173 g

What each input means

Pepper Weight (g)
Total weight of fresh peppers in grams. Mix varieties for complex flavor.
Brine Salt (%)
Salt concentration of the brine. 3–5% is standard for fermented hot sauce.
Garlic Cloves
Number of garlic cloves to add (~5g each).
Target Heat / Ferment Time
Longer fermentation develops deeper flavor and slightly mellows heat. Hot peppers need longer to develop complexity.

How this is calculated

Worked example, using the default values

  1. Identify Input Parameters
    4 parameters
    Pepper Weight (g) = 500, Brine Salt (%) = 3.5, Garlic Cloves = 4, Target Heat / Ferment Time = 2 = 4 input(s) provided
  2. Calculate Salt for Brine
    Salt for Brine
    10 = 10
  3. Calculate Brine Volume
    275 = 275
  4. Calculate Fermentation Time
    Fermentation Time
    7 = 7
