What each input means

Total Batch Weight
Total desired praline weight in grams. A standard home batch is 300-500g; commercial batches may be 5-10 kg.
Nut Type
1 = Almond (classic French pralin), 2 = Hazelnut (gianduja style), 3 = Pecan (Southern praline). Each has different roast temps.
Sugar Ratio
Percentage of the non-butter portion that is sugar. Classic French praline is ~55%. Lower = nuttier, higher = sweeter and more caramelized.
Butter Percentage
Percentage of total batch that is butter. 0% for dry praline, 5% for richness, 10-15% for Southern-style creamy pralines.
