Mobile Kitchen Equipment Calculator

Equipment list and cost estimate from menu concept.

About this calculator

This calculator estimates a full commercial kitchen build from your menu concept rather than requiring you to price out individual equipment items yourself. Every truck starts from a fixed base of required infrastructure — prep surfaces, a hand sink, a three-compartment sink, a fire suppression system, a ventilation hood, a commercial generator, and a POS system — that adds up regardless of what you cook. On top of that, cooking equipment (flat-top grill, deep fryer, steam table) is added only if you select it, and menu complexity adds further cooking equipment: a mid-complexity menu (level 2, sandwiches/burgers) adds a flat $1,500 for extra burners or a plancha, while a complex menu (level 3, specialty items) adds a further $2,500 on top of that for things like a pizza oven or smoker. Refrigeration is priced per unit at $1,500 each, and smallwares (pans, utensils, containers) scale with complexity.

All of that sums to a new-equipment total, which gets a 45% discount applied if you choose to buy used (reflecting typical 40-60% savings on secondhand commercial equipment), then adds a 17% installation and fitting charge — covering gas/electric hookup and professional mounting — for the grand total. Treat the buy-used toggle carefully: the 45% savings assumes functional, well-maintained used equipment, and used gear typically carries no warranty and a higher chance of near-term repair costs — which is why the calculator separately estimates annual maintenance at 5% of equipment cost, and that figure likely runs higher on an all-used build. This tool prices equipment and installation only; it excludes the truck itself, kitchen build-out labor beyond equipment fitting, and permits, so pair it with the startup cost and permit cost calculators for the complete picture of what you need before opening.

How to Use This Calculator
  1. Select menu complexity (1 = simple, 2 = moderate, 3 = complex) to set base equipment needs.
  2. Toggle on/off whether you need a flat-top grill, deep fryer, and steam table.
  3. Enter the number of refrigeration units and choose whether to buy used (saves ~45%).
  4. The calculator shows total cost including installation, equipment subtotal, installation and fitting cost, and annual maintenance budget.
  5. Request quotes from commercial kitchen equipment dealers using these figures as a target budget.

What each input means

Menu complexity (1-3)
1 = Simple (tacos, hot dogs). 2 = Moderate (burgers, sandwiches). 3 = Complex (full kitchen, specialty items).
Flat-top grill (0=No, 1=Yes)
Commercial flat-top griddle for burgers, eggs, sandwiches.
Deep fryer (0=No, 1=Yes)
Commercial deep fryer for fries, chicken, etc.
Steam table (0=No, 1=Yes)
Steam table for holding hot prepared items.
Refrigeration units
Number of under-counter refrigerators/freezers needed.
Buy used equipment (0=No, 1=Yes)
Used commercial equipment saves ~45% vs. new.

What each result means

Total (equipment + install)
Total cost including equipment and installation/fitting.
Equipment cost
All equipment before installation.
Installation & fitting
Professional installation, gas/electric hookup, mounting.
Base equipment
Required items: sinks, prep surfaces, ventilation, fire suppression, generator.
Cooking equipment
Grill, fryer, steam table, and specialty items.
Refrigeration
Under-counter fridges and freezers.
Annual maintenance budget
Recommended 5% of equipment cost for annual maintenance.

How this is calculated

Worked example, using the default values

  1. Identify Input Parameters
    4 parameters
    Menu complexity (1-3) = 2, Flat-top grill (0=No, 1=Yes) = 1, Deep fryer (0=No, 1=Yes) = 1, Steam table (0=No, 1=Yes) = 0 = 6 input(s) provided
  2. Calculate Total
    Total = adjustedTotal + installationCost
    14543.1 = $14,543.1
  3. Calculate Equipment cost
    Equipment cost = totalNewCost * usedDiscount
    12430 = $12,430
  4. Calculate Installation & fitting
    Installation & fitting = adjustedTotal * 0.17
    2113.1 = $2,113.1

Frequently Asked Questions

Does buying used equipment also reduce my installation cost?

Yes. Installation and fitting is calculated as 17% of your equipment total after the used-equipment discount has already been applied, so a lower equipment subtotal from buying used automatically produces a lower installation charge too — the discount effectively flows through the whole build.

What's included in the 'base equipment' every truck needs, and why can't I remove any of it?

Base equipment covers prep surfaces, a hand sink, a three-compartment sink, a fire suppression system, a ventilation hood, a commercial generator, and a POS system — infrastructure required for basic health-code compliance and operation regardless of your menu. It's fixed because virtually every commercial food truck needs all of these items to pass inspection and operate at all, unlike cooking equipment which depends on what you're actually making.

How much does menu complexity add beyond just choosing a grill, fryer, or steam table?

Menu complexity adds cooking equipment on top of whatever you individually select: a moderate menu (level 2) adds a flat $1,500 for extra burners or a plancha, and a complex menu (level 3) adds a further $2,500 for specialty equipment like a pizza oven or smoker. It also raises the smallwares estimate, which is $500 plus $300 times your complexity level, since a more complex menu needs more pans, containers, and utensils.

Why does the calculator budget for annual maintenance, and does it change if I buy used?

Annual maintenance is estimated at 5% of your equipment cost after any used-equipment discount, giving you a recurring budget line separate from the one-time purchase. Used equipment typically carries no warranty and a higher chance of near-term repairs, so treat this 5% figure as a floor rather than a ceiling if your build is largely secondhand.
