What each input means
- Fruit Weight
- Weight of prepared fruit (washed, peeled, crushed) in pounds.
- Fruit Pectin Level
- 1 = High-pectin (apples, citrus — no added pectin), 2 = Medium (blueberries, cherries — 2 tbsp/lb), 3 = Low (strawberries, peaches — 4 tbsp/lb).
- Sugar Ratio
- Sugar as a percentage of fruit weight. Traditional jams use 60-65%. Low-sugar recipes (below 50%) need 25% more pectin.
