How to Use This Calculator
  1. Enter the milk volume in gallons you are using for the batch.
  2. Select the rennet type (liquid animal, vegetable, or tablet) and enter its strength.
  3. Set milk temperature at the time of addition.
  4. The calculator shows rennet volume in mL, teaspoons, drops, and required dilution water.
  5. Dilute rennet in the indicated water volume and stir gently into milk for even coagulation.

What each input means

Milk Volume
Amount of milk in gallons.
Rennet Type
1 = Animal (standard dosing), 2 = Vegetable (1.5x more needed), 3 = Microbial (1.2x more needed).
Rennet Strength
Strength multiplier. Single-strength = 1, double-strength = 2 (use half the volume).
Milk Temperature
Milk temperature at renneting. Optimal range is 86-90°F for most cheeses.
