How to Use This Calculator
  1. Select the food type you are canning (vegetables, meat, beans, etc.).
  2. Choose your jar size (half-pint, pint, or quart).
  3. Enter your altitude above sea level.
  4. The calculator returns required PSI, processing time, base PSI at sea level, and altitude PSI adjustment.
  5. Process jars at the indicated PSI for the full processing time, adjusting for your pressure canner type (dial vs. weighted gauge).

What each input means

Food Type
1 = Vegetables (25 min), 2 = Meat (75 min), 3 = Poultry (65 min). Base times for pint jars.
Jar Size
1 = Half-Pint (8 oz), 2 = Pint (16 oz), 3 = Quart (32 oz). Larger jars need longer processing.
Altitude
Your elevation in feet above sea level. Pressure must increase above 1,000 ft to ensure safe temperatures.
