About this calculator

This calculator breaks down hotel food and beverage revenue five different ways. F&B RevPAR Contribution and F&B per Occupied Room turn out to be the exact same calculation -- both divide Total F&B Revenue by Occupied Rooms -- so any statement about one applies equally to the other. F&B per Guest divides that same F&B Revenue across total headcount instead of room count, so it responds to Occupied Rooms and Avg Guests per Room together, not Occupied Rooms alone.

F&B % of Total Revenue depends only on Total F&B Revenue and Total Room Revenue -- it's a pure share calculation, so Occupied Rooms, Avg Guests per Room, and the two capture rate inputs have no effect on it at all. Breakfast Covers and Dinner Covers are each driven by exactly three inputs -- total headcount (Occupied Rooms and Avg Guests per Room) and their own respective capture rate -- with no cross-contamination between breakfast and dinner inputs. 10% Capture Uplift responds most to Total F&B Revenue itself, since raising the revenue base scales the potential uplift proportionally more than shifting either capture rate does on its own.

Frequently Asked Questions

Why are F&B RevPAR Contribution and F&B per Occupied Room identical?

Both are calculated with the exact same formula -- Total F&B Revenue divided by Occupied Rooms -- just displayed with different rounding. F&B RevPAR Contribution shows the raw unrounded figure while F&B per Occupied Room rounds to the nearest cent, but they always represent the same underlying number.

Does Room Revenue affect F&B per Guest or F&B per Occupied Room?

No. Both are calculated purely from Total F&B Revenue and either Occupied Rooms or total guest headcount -- Total Room Revenue never enters either formula. It only matters for F&B % of Total Revenue, which compares F&B Revenue against the combined room-plus-F&B total.

What determines F&B % of Total Revenue?

F&B % of Total Revenue is calculated purely from Total F&B Revenue and Total Room Revenue as a share of their combined total -- Occupied Rooms, Avg Guests per Room, Breakfast Capture Rate, and Dinner Capture Rate have no effect on this specific percentage at all, even though they matter for other figures on this calculator.

Does Dinner Capture Rate affect Breakfast Covers?

No. Breakfast Covers is calculated purely from total guest headcount, Occupied Rooms times Avg Guests per Room, times Breakfast Capture Rate -- Dinner Capture Rate, Total F&B Revenue, and Total Room Revenue never enter that formula. The same isolation holds in reverse for Dinner Covers.

What has the biggest effect on 10% Capture Uplift?

Total F&B Revenue, since 10% Capture Uplift scales directly and proportionally with it -- a given percentage change in F&B Revenue moves the uplift estimate by that same percentage, more than an equivalent percentage change in either Breakfast Capture Rate or Dinner Capture Rate produces on its own.
